About my eggs...  

My chickens run range-free in the back of the property. They get a lot of extra feed which helps make the eggs taste better! I sand the eggs to clean them.  The experts say not to wash them since washing will remove the protective coat that the hen leaves on them so they will store better.  Its ok to wash them just prior to use if you choose.  

Produce availability...

Years ago I spent several weeks in a B&B in Castine Maine.  Each day the chef would ask the guests if they would be there for dinner.  Once he had a headcount, he left for the city to select the best meat and produce that was available.  You never knew what you were going to eat until he returned, but it was always excellent.
